It was Uncle Tom at Henry's Market, as well as Uncle Kevin. Kevin was the real butcher and Tom had all of the Irish. Actually, both had been born in Ireland and they started out in the states in the Saint James parish in 1924, and Kevin - the younger one - taught Tom how to "break a beef." Tom was an expert at one thing though, cleaning chickens which hung on those great hooks. Both of them came up from 14th and Guerrero and the Tip Top Market to open their own store, while Kevin played around with selling "frozen meats" ( real dinger in those days).

Tom stayed at Henry's while Kevin left to open another shop up on Eureka.

And by the way, it wasn't always balongna, it was hot dogs if you were lucky and some salami if you really gave Tom the baleful eyes. Yes, they will be missed - having passed on some thirty years ago. Oh, by the way - they were McCarrolls in Ireland, and they became the crazy Carroll brothers from Sacred Heart.
